Charro Beans
Ingredients
1 lb Pinto Beans
1 Yellow Onion (Chopped)
6 Cloves of Garlic (Chopped)
4 Jalapeno Peppers without seeds (Chopped)
1 Lb bacon fried and cut into 1 inch pieces
1 cup sun dried tomatoes cut into medium chunks
1 Bunch of Cilantro (Chopped)
1 Tbs Seasoned Salt
1 Tbs Pepper
1 Tbs Garlic Powder
1 Tbs Cumin
1 Tbs Olive Oil
Preparation
Wash beans and vegetables.
Cooking Instructions
Put beans in a large pot. Cover beans with water and bring to a boil. Reduce to simmer and cook one hour.
In a frying pan, on medium heat, add olive oil, onions, garlic, and jalapeno peppers. Saute until done. Add 1 inch fried bacon chunks and continue to cook for 3-4 minutes. Add spices. Do not add the Cilantro. Stir and add to beans.
Cook on simmer 2-3 hours. Add Cilantro at the end.
